Try her Branding Fire Rub on your next roast.August 2002 -- This tasty blend of herbs and spices is sure to please your guests and is so good that you'll find many uses for it. For a free recipe card, e-mail us below! 2-3 tsp chili powder 1-2 tsp crushed red pepper 1 tsp paprika 1/4 tsp mustard (dry) 1 tsp brown sugar 2 tsp dried garlic 4 tsp Hawaiian salt 1 tsp dry oregano (leaves) 2 tsp cracked black pepper Combine all ingredients and mix thoroughly. Rub into meat and let sit at least five minutes, longer for a stronger flavor, then grill, sear or bake as desired. Store in airtight container. Rub will stay fresh longer if container is stored in freezer. This recipe is a favorite on steaks grilled over the branding fire after our work is done, hence the name. Branding time is an old tradition still alive on many ranches. This is the term used for the first work of the season’s calves. Although not all ranches continue the traditional “branding” to mark ownership of their stock, it is at this time that ear tags are given, vaccinations administered, sorting takes place and any other work that needs to be done when cattle are gathered. Friends and neighbors come out to lend a hand for the big work, and afterwards we join together around the fire for kaukau, music and catching up since the last gathering.
